Hickory Smoked Onion Rings

Smoked some more onions for onion rings this weekend... I used hickory and my drum.

I let the onion slices smoke as long as I can without letting them get too dark..

I store the smoked onions in a baggie until I'm ready to fry them

make a beer batter by mixing
1 cup of flour
1 tsp of salt
1 tsp of baking powder
and enough beer to make a pancake like batter
(about 3/4 of a beer)
I used some Tecate for this batch.

I flour the rings before dipping them in the batter..

fry til golden...

Phu, no need to bring any, I'm still working on this case of mexican beer... I usually drink 3.2 beer, this stuff is a bit stronger.:shock: :biggrin:

I try to either smoke the onion slices low and slow so they won't cook or smoke the heck out of them for a short period of time. I had other things in the drum this time so I went for the low and slow approach.
 
Where the smoke ring?

LOL, they look great. I bet they are delicious.
 
Nice rings! Usually I smoke an onion to use in a sauce I make, those are awesome though, would have gone great with my dinner! Wish I'd have seen it sooner.
