Talking Snacks For An All-Nighter Are Ready




Here is the first slice of a pressure finished pastrami I smoked today. This will be part of the cooks snacks (and visitor snacks...) served tonight while cooking our Parade Day Barbecue. We'll get the cookers fired up by 5 or 6 tonight shooting for a 11AM finish. The menu is 40# of brisket, 70# of pork butts, a bunch of lamb shoulders, 150 hot dogs,150 sloppy Joe's, and all kinds of sides.

I'll try to get some pictures...

WOW that looks so good! Hope parade day is a great success and look forward to seeing the pics of it! That's an awful small slice looks like someone ate half of it.....

I take them to around 150° on the smoker, then give them 30 minutes in a pressure cooker with 1 cup of water. This makes them tender like deli pastrami from a steam table. Here is one of the pie pans I'm taking along.
