Default rib meat

Hey Brethren, I need some suggestions on what I can do with the trim rib meat from my spares. I usually save it for Peoples choice at IBCA comps. I think Norco posted a slow cooker recipe, also any other recipes. I need to use some of this meat so I can make room in my freezer.

P.S. I need something other than bean recipes!! I have plenty of those.

put it in beans ... shred it and us it in:
  • scrambled eggs
  • abts
  • biscuits
  • just about anything

Smoke it, then simmer it for a couple hours in a pan of thinned BBQ sauce. Makes great eatin as a meal, as treats, or to make sammies.

How about slow cooking it in a crockpot and making some rib meat enchiladas. I have never done it with rib meat but it works well with pulled pork. I just use canned enchilada sauce, cheddar cheese, and corn tortillas yum.

Norco's recipe doesn't get much easier and it's fantastic.

I did it but used a pressure cooker to speed stuff up. I'd go with that.

I'm sure Pat will chime in here. I don't know where the recipe is but it's simple.
