Talking Pig Cook on Shirley Fabrication Smoker

This is my first pig cook on my smoker I purchased from Tuscaloosa Q and Tyler AKA Shirley Fabrication. I tell you, this cooker is amazing! I get compliments from everyone who sees it! All they talk about is the quality and the neat weld joints. I cooked a 50 lb pig today. I split the spine on both sides and stuffed it with Italian Sausage. Then injected and rubbed. I let the little piggy rest for about 5 hours on ice on the foiled rack. I started the cook at 6 am and took it off at 4:00 pm (275)The meat was tender and juicy! Not good at posting pics yet but here ya go!

Thank God it didn't rain! They were calling for rain yesterday and today. I was praying it didn't rain! It was sunny yesterday and today. What a great cook it was!
