First run at Picanha

Was at the meat counter at one of the local stores that carry our products today and saw what they called Coulotte steaks, confirmed with the butcher they were the same as Picanha and picked up several steaks.

Seasoned with Q-Salt and put on the rotisserie spit

Set up the rotisserie over the 26’er set up with reverse vortex and went to work

Rump cap...one of the great meat pleasures on earth. Good meat, but that fat...oh, that fat...

Yep yep. The fat and roti make it soooooooo good. You can see the fat rendering and that liquid gold basting the meat and dripping into the fire.

What's the proper way to eat picanha? Get you a slice with a good hunt of fat on it or eat the fat separate?



I like to slice it so there’s a bit of fat in every bite, but the fat could easily stand on its own
