Default Smoking beef ribs at work!

Brought a couple racks of beef ribs and my UDS up to work today to cook for our team. We had a junk month last month and I wanted to boost everyone's spirit. Came out great, but took WAY longer than usual. On at 9:30am, off at 4:15pm.















They were sliced and eaten in 5 minutes flat.

Nice... they never did that for us back when I was a car guy. Best we ever got was pizza on Saturdays so we wouldn't leave the dealership.

What rub did you use on them beauties?

Thank you! They were chuck short ribs. Certified Angus beef. I used a homemade SPOG. I have a 4 pepper blend I grind fresh and use 4 part pepper to 4 part coarse kosher salt, to 1 part granulated garlic to 1 part granulated onion. It's my go to on most everything. (I measure by weight it's the only way to get this right IMO)
