I end up with a freezer full of sausage, pork, brisket, and chicken and always end up with Brunswick stew. Brunswick stew is literally just "all the bbq in my freezer that I don't want to go bad because I make way too much with only a wife and 3 month old to feed" soup.

Fry it up until it is crispy for carnitas.
if you have bigger pieces, cut it into chunks and make pozole with it.
