I understand that there is a difference in cooking temp and times in Prime vs a Waygu.

I have never cooked a Waygu but do have two in the freezer. One for practice and one for comp.

The issue with this is that I still seem to do good with me prime briskets and don't want to change.

However, I would like to hear from some of you that have cooked both.

Thanks!

I've cooked both, and have done well with both. Your variance will be nominal in timing and quality. I didn't have to change my process at all for either type of brisket. The biggest difference is about $50 a brisket ;)
