Default 1st picnic on WSM now. Boring prep pics and a ?

Ok folks, got a 7.49# picnic on the WSM. Chilly 38 degrees w/fog this a.m. My first smoke in the cold. Skinned and rubbed (homemade) it. What goodies can be made w/ the skin? Ideas welcome. Pork on grate at 8:15a. Hope to be eating by 7p. Gonna cook @275-300, no foil, no spritz, no looky, pull when bone loose, wrap and cooler. Sound like a plan? Here are the prep pics:
