Saturday's cook
a little late in the week, I know..just been busy.
3 slabs of ribs, some fattys, and smoked cream cheese for a dip. slow rolled 'em about 4 hours at 215-225... with hickory.

All I did was put the cream cheese in the baking pan and put it in the smoker and let it absorb the smoke.
The dip was a mixture of the cream cheese, the fatties (chopped up) and Ro-Tel tomatoes... next time I might add a little cheddar to it or something.. but it was gobbled up by the folks pretty quickly.
