having fun with the UDS
put a butt on this morning, UDS has been running rock solid at 250-260 all morning. afternoon wind's came up temp climbed a little and have been having nothing but fun chasing her, my goal is to not exceed a 30 degree variance, I’m running 250 - 275. Man I dig this smoker....

I think we all like our UDS's.
Next time try hot and fast. I cook at 300ish. It's faster and just as good, I think. Part of fun of BBG is experimenting.

Butts are very forgiving of temperature swings but it is good to learn how to control it for when you need to. Bet the butt turns out great.

I like big butts and I can not lie! :-) Enjoy it. Best thing I did after buying my house was build a UDS for the yard!
