Harbormaster, I'm not independently wealthy, but I wish I were.....then I could spend more time here with you nice people. I'm just a hard worker. lol!

I tried some of the cracked black pepper rolled bacon awhile ago...



Fried up 2 sopes...





Topped with some of the fried pepper bacon...




A couple of eggs fried in the bacon drippings...



Topped with pico de gallo and some chipotle hot sauce....



I didn't hate it. Actually it was kinda tasty!

I dry cured the jalapeno bacon for one week then rubbed it with jalapeno powder and black pepper before smoking.
I will try it next. :)

Great looking pork you have there!

I have a question if you don't mind. Isn't the cold smoke temp in the "Danger Zone" for pork? Is it the cure that keeps it safe? Thanks!
