Thanks for all the input. Here are the facts. I know T&H is the best bet, BUT I'm a novice in the BBQ game and don't know who would pick it up for me (I would not trust Aaron with my weed whacker, let alone my meat).

In the future, after I bribe/meet more people who get theirs from there that will be the plan.

I found 2 places in OC. One in Brea and one in Fullerton. Both are old school butchers.
I'm waiting to hear from one, but got this from another.

What are your thoughts on these prices?

Wagyu Brisket- 10.99/lb

CAB Brisket- 7.99/lb

Unfortunately I cannot get a prime brisket at this time

Pork Spare Ribs- 7.49/lb

Free Range Chicken Thighs- 6.49/lb

I also cannot get a bone in pork but.. I CAN get boneless.. which is 6.99/lb

i can tell you one thing you'll save some enough money going to T&h then you'll spend in gas. those prices seem pretty high

Lance, I hope that's in pesos and not dollars. That's insane!

BTW, I called Roberto at T&H and will be picking up from there soon for Wildomar. He said that it will improve my placings at comps, watch out everyone!

Lance - I've used many a weed whacker and I can tell you - I'm good at it! I'll leave out how many meats I've used. BUT - I think there's a compliment in there somewhere.

The prices you show are really really really high.... or the guy quoting you is.

If Berto picks and packs up your meat (in a non-submarine way) - I'd be happy to deliver for you.

Heck, Craig sounds like he has a good track record, I would have him pick me up meats if it meant top 3 calls.

OK, just got back from RD. Choice packers only - but they were the fattest packers I have ever seen. Ribs looked decent, bone in butts looked great.

Questions for Mr Black or Allen or any other T&H faithful:

1. What does a competition kit (for lack of a better term) cost you from T&H?

2. Do I have to know the secret handshake to get this deal and speak-a-spanglish? (I do by the way)

3. What's is in the standard kit?

4. Do you get your PC meats there too or just get Costco/Sams stuff for PC.

***Aaron, I owe you a beer or 3 for the laughs from the Meat Me vid (I have been saying **** tons for last 2 weeks) and your gracious offer to pick up my meat...umm bring up our meat -you know I mean.

Lastly, I have a few MRE's from Korea that I have saved for this event. BBQ ham steak aged 20 years is on me for all your all help.

I am sure that no two teams order the same thing. Just call T&H, talk with Roberto and tell him what you want.

here is my standard order.
2 prime briskets
4 bone-in pork butts
4-6 racks of spare ribs

I get my chicken at Sams because I prefer tyson thighs.

Call Roberto, he will recommend what you need.

Pete

My typical order is similar to Pete's but a little lower budget:

2 hand picked bone in Butts
4 hand picked racks of Spares
1 hand picked brisket packer - up to 60 days in advance so Berto can store it / age it for me in his refer
10lbs of chicken - trimmed up special for me by Berto so it has lots of extra skin.

Seems like it is usually around $120.00 but I add extra choice briskets and butt for PC if the pricing is on target - and it usually is. If there's an insane deal - like $.99 shoulders at Staters right now through next Tuesday, I'll pick that up for PC.

Like I always say Pete - you can have all my recipes - it's all about the execution. Now if I could only duplicate those few times I actually executed I'd be someone!

I asked for 2 briskets, 2 butts, 4 racks of spares, and some beef ribs.
While I'm there I may put in my order for May comps.

Roberto will not hold me to any of this, if I end up not buying all of that he's OK with it. He just wants to know what we may buy so that he has enough for us to choose from.

Damn shame, I have to get my meat almost 200 miles away from Ventura proper for comps. T & H meats is awesome.
