Threw this together tonight...made a peach rhubarb chutney. I didn't really have a recipe, so I winged it as follows:
1 c water
1/2 c sugar
2 diced fresh peaches
1 large diced stalk rhubarb
Boil water & sugar, then add fruit...let it come back up to a boil, then reduce heat and simmer for 30 minutes
Meanwhile...
I put some Yardbird on my chops and let it sit for 20 minutes or so. Fired up the grill, and when the chops went on, I took the chutney off the heat. I know technically you're supposed to let chutney cool for a few hours for it to be chutney, so maybe this was more of a sauce, but anyway, I grilled the chops to 160º, rested for 5, and put 2 tablespoons of chutney on each chop.
It was out of this world!! Give this a shot if you have rhubarb around...you won't regret it!
Had some foiled potatoes w/onions & bell peppers, and grilled asparagus on the side. A little grilled pineapple for dessert.
And OH YES, it DID happen:
