Thinly, and against the grain which runs at a peculiar angle on tri-tips.

Every time that I ask for a tri tip, the butcher insists that you can't get them anymore because they don't get hanging beef. Is there another cut that would include a tri tip that I don't know about or do I just live in the wrong part of the world. When I wanted a brisket, I had to show him where it was on the cow, and he said"oooooh, stewing beef".

Wrong part of the world expatpig.

They go on sale for $2.50 and sometimes $2.00 a pound around here. Just like ground beef and rib-eyes, I would be SHOCKED if the regular grocery store's meat cooler wasn't fully stocked with them around here.

Wrong Part of the world.

The against the grain advice is all correct, but..... the grain in a tri-tip changes from one end to the other. So don't just pick a line and start slicing, rather slice a litle bit and check the grain on the slices. Every now and then, you may need to alter your direction a few degrees.

Tri-tip is rare in grocery stores around here in Georgia, but easy to get wholesale if you are willing to buy a case.

A lot of tri-tips from other parts of the country get shipped to CA if I am not mistaken, that is why they are hard to find in some areas.
