Hall of fame donors is a great idea. For locals I would suggest: Most restaurants have a "soft" opening where a select group come in and dine days before the actual opening.
My suggestion is have a seating for two for $400-500.

Have some cookbooks laying around? auction item maybe?
I know your time is probably limited but you could do some classes and/or especially directed to catering. Maybe do a high ticket 3k plus catering gig as one of the options.
