Default Gig in October for 120 Same day cook

One of my Trash customers wants us to cook his companies fall BBQ (they do 3 a year)
120 employees. They want Ribs (don't they all?) Looks like Spares, Chicken Breasts, BBQ Beans, Green Salad, a Brownie and Drinks
What ya think per head?
I do a lot of $ with these Guys.

17.00 a head. The ribs and chicken push it over the top. About 5 times more work in my opinion. 40 - 50 full slabs - that's just too much effort. 4 bones then only 30 - still more work than it needs to be.

Thom,

Not sure what else you are including (disp. chafers, plates, utentsils, cups, linens..etc.), plus are you smoking or grilling those ribs. Are you providing buffet or serving. How many helpers? Travel?

If this is a good customer and you will get the other two parties, I would do this for about $14 - $15 a person. The ribs are definitely going to be cumbersome, but the rest all looks like cake.

BTW - If you are serving full spares (not st. louis) I would do 2 maybe 3 ribs per person. But then this will means that you will need to serve for portion control.

When catering, I choose to do do as little pre-labor as possible, meaning ribs come pre-tripmmed St. Louis style. For example: You pay $1.39 for untrimmed, and you pay 1.89 for St. Louis, I will take St. louis cut anyday for catering. Why, time, cost of labor, the less the meat is handled by your staff, etc.

If you have 200 clients at .33 per lb, the cost would be $91.74; At $1.89 the cost would be 124.74.

15 sounds right for good customers.

3 bones/person * 120 people = 360 bones /13 = roughly 28 racks. Add 3 extra racks just to be safe = 31 racks. Maybe a little less because you are cooking chicken also.

I would be at $15.95 and If it were ove 60 miles round trip I would have a fule surcharge in there also. Diesel is still out of control. I have also found that if you have two meats or more you can do two bones and still fill em up especialy if you pick out the biggest racks you can find. My butcher takes care of me on that end.

The guys I am cooking for make the Bio Diesel that I run
:) I haul Green Waste for them and had to hit em with a Diesel Surchange
early this year
