Funny thing. My ribs came out so juicy the other night, it tasted like someone had poured grease all over them. It was actually kinda gross
Edit: If you are asking my opinion, both the doggy anchor and the hardware look galv. |

Well guys, I read through the first ~200 pages... Then said "Screw it, if I haven't learned it yet Im not going to." So I built me a UDS. Got it roughly finnished lastnight right before dark and did my first cook/season on it this morning... I am in love! Between warmup, the 8# pork butt and the ABT's I threw on while the pork was resting, I had the smoker running for about 12 hours. This baby hardly used any coal... maybe 5-7lbs with a few chunks of mesquite and pecan. This has me dumbfounded because I have been smoking on my large offset up until now and for a cook like this it would have taken alot of wood and charcoal... I only wish I would have built it earlier. Then I could have used it to cook the turduckens I smoked for Thanksgiving and Christmas. Needless to say I see alot of ugly smoke in my future!

Just picked up my drum. Thanks for the info. Those are pretty nice drums. Did you burn yours out even though they had been burned out, sand blasted and washed prior to purchase? The inside is bare metal and is clean. I didn't know if a good wash out with soapy water and than hot charcoal run before the first cook would be enough.

i cant keep my drum under 275 thats if every thing pretty much shut down i thimk im gonna build a heat shield

It's a learning process, every drum will be a little different, practice,practice,practice. Try using fewer coals to get it going, bring it up to temp slower, it's easier to increase temp than lower it. For a heat deflector, just get a pizza pan and drill some holes in it, it works for me.

You really shouldn't need a heat shield. I held my UDS at 200 last week for several hours. If I shut everything down, it will be out in 20 minutes. How much charcoal are you using to get it going? You should only be dumping a dozen or so lit ones on it max. Catch the temp on the way up.

Charcoal Grate
Picked up my drum today! For the charcoal basket I have a choice of 13" or 15" charcoal grate laying around and can only find 12 x24" expanded metal. For a newbie should i use the 15" grate and cut down the metal or keep as is?

If everything is shut down, it should go OUT. Otherwise, air is leaking in somewhere. It doesn't take much.

Ugh damnit I just found out all the hardware I bought at Home Depot is zinc, I knew I should have gotten Stainless. Now I am gonna have to go get all new hardware, I'm really paranoid about using zinc/galvanized stuff now.

inv3ctiv3, just give the zinc galvanized hardware a 2 or 3 hour bath in white vinegar. It will be zinc free after that.
