Am kicking around the idea of building a food cart. Is converting something like this feasible or is it just a bad idea?

In my experience, unless you’re a fabricator, it’s better to buy New than spend the money on something old and convert. I enclosed a cheap Northern Tool trailer and I ended up spending more than a new enclosed trailer.

That's what we did. You just have to price out what you need/want done and compare the costs. Cover the HD needs first and go from there. For instance, our trailer is 7x16 and we had the vending window and walls put in for under $1600.
