Such a nice day today we decided to have some friends over to help with our rib cravings. Scary part was, they love good ribs and aint afraid to give some opinions, so I wanted these to be my best yet even if it is my 3rd try at ribs on the uds. I didn't realize I was running short of my normal briquettes and had a bag of mesquite Kingsford but after reading some disappointing reviews of using them in the low and slow method I was gettin nervous about if I was gonna have to head to town. I decided that if I just filled my chimney with the mesquite stuff with my remaining stock stuff in the basket that it should be ok since it would be hot enough to burn it up fairly quick without getting the sooty flavor. I did add a small piece of Oak for smoke though.

So we trimmed them up and did a mustard slather(first time trying it) and then sprinkled on a good layer of rub while the drum was heating up. I was having some trouble today maintaining the temps but it was in the low 30's with a good stiff breeze so maybe thats why. Seems like it was either too hot or too cool. Only time I could get consistent temps was when she was running about 275-280 so thats where I ran it.

I did the 3,1.5,1 method, spritzing with apple juice every hour and coated with my sauce in the last hour after coming out of the foil. To say they were enjoyed by the company would be an understatement.:biggrin: When I asked after supper what I should try changing the next time around I was told to,"not to change a dam thing!":biggrin::cool:

Now just got to figure out what to do with the leftovers :rolleyes:

Still have about 6 ribs left and all the trimmings yet. Those were some meaty ribs I think each full package weighed in at about 9 1/2lbs.

I think I'll take some to my Dad, health wise he's not in a good way and I know this will get his appetite back.:tongue:

Pictures like that are putting my butcher's kids through college. Gotta go get a couple racks now.
