Default Catering sports event

So I have a chance to cook for about 500. Just burgers and dogs.

The event is an all day soccer tournament. How the heck do I estimate how many burgers and dogs to buy?

I thought when you catered the customer tells you how many burgers and dogs to make, that is why some say the cater and not vend.
