is this good for pulled beef. at 190. i will smoke for 3 to 4 hours then foil to finish. any thoughts and recipies?
 
I have not tried one, but they are supposed to be lean and all roasting directions I could find with them suggested a moist cooking, braised, crock, etc...
 
I use chuck in chili, well marbled, good beef flavor. But the cook is in liquid. I have taken tri-tip roast to 180 degrees, a quicker cook than a brisket, similar texture at that temp.
