Unfortunately Ronelles pictures didn't make the various host site migrations, but the last (only) St Louis bash I attended was a cast of characters with only one local (NTHole)

If I come down there, are you guys going to show me the proper way to cook a STL Pork Steak? I've tried numerous times and for the life of me, I can't get it tender enough.

I can cook brisket, ribs, butts, tri tip, all sorts of stuff. But pork steaks are my nemesis!

Nothing personal, I've just eaten enough pork steaks (with Maulls, of course) that I don't care to eat another one for quite a while.

StlSportster posted it somewhere, I need to find it.

It's all in the braising.

Grill it, then braise if for a few hours.

Although common place in restaurants now, its a St Louis original.

Ravioli would be a PITA to make. Although... I had a mushroom ravioli in a seafood dish in heavy cream that almost made me want to buy a pasta maker.
It would be a welcome treat at a BBQ function to have, but I can't see anyone bringing that.

I can help with the toast part. I'm hillbilly therefore not sure what a ravioli is. But if there are any in the swamp around here I can shoot one and skin it. What do they look like?

Not sure what my Friends will be doing on the pork steaks Andy but I can promise you some tasty boudin.
