Default 1st smoke on UDS tonight! (PRON included)

Well, I finally settled on doing a couple simple fatties for my first smoke. I loaded up the basket and fired up my new Harbor Freight weed burner (for those of you who haven't ever handled one of these...DON'T SQUEEZE THE TURBO TRIGGER INSIDE YOUR UDS!!! Nearly set myself on fire!)

Took a roll of Bob Evans sausage & a roll of generic HyVee sausage and rubbed 'em both good with some Plowboy. Once the smoker was up to temp at 250, I tossed on a couple cherry chunks.

One of the fatties cooked a lot faster and was at 220 degrees when I checked on it 2 hours after starting! The other fatty was at 190. I pulled em both and served 'em up with some Hayward's sauce on the side. Salty awesome goodness!!! Even got nice smoke rings too!

Before coming to this blog, I'd never heard of a fatty. Wondered what they were until I saw a pic or two. Your pic's have convinced me that I have to try 'em. Man, my mouth is waterin'. Thanks for sharing.

Pretty decadent stuff, but darn simple! The one that I took off at 190 degrees was more juicy, while the 220 degree one had a nice bark (but the saltyness was much higher). Both tasted awesome with the Hayward's sauce.

Looks great man.

On a side note... I could be wrong but I think I've seen pics of UDS burning up wooden decking. I'm just looking out for you when I say raise that sucker up off the wood a bit with some bricks or something. Again, I don't have a UDS so I'm not too sure how they run, I'm just saying this based on when I have seen happen to others bro.

The bottom of a uds runs cooler then one might think. That is, if your fuel basket is properly constructed. Doubt it would start a fire but it may singe the wood. A few blocks in the interest of safety wouldn't hurt.
