Default French Grandma's Recipe Tweaked My Way A Little

Grandma's Chicken I'll take a stab at it

Quarters



Separated into legs, thighs and spine for stock



Got on to making the stock



Fast forward. Oh yeah!



Moved onto the next phase



Caramelized onions



Bacon



'Shrooms



Garlic taters







Browned up the chicken



Thickened up the stock and let everything simmer

Finished product Gotta Americanize it with Sriracha. Well sort considering it a Vietnamese hot sauce with American roots?

Thought I was going to see some coq au vin, for a minute, but that dog will hunt too. I'm sure there is a French man somewhere, screaming over the Sriracha, but it looks like an interesting twist.
