I'm doing a Texas style bbq this sunday , looking for some good recipes , also smoking some brats and chicken , wish I could find some Lone Star Beer
 
This is the recipe that made me the man I am today Mom used to make it for me on my birthday

King Ranch Chicken Casserole

Ingredients:
1 cooked 2 1/2 pound fryer (cooked with cumin, onion, celery and garlic) shredded
10 corn tortillas
1 onion, chopped
1 bell pepper, seeds and stem removed, diced
2 cups of grated cheddar cheese
1 can of cream of mushroom soup
1 can of cream of chicken soup
1 cup of chicken broth
1 can of Ro-Tel tomatoes
1 tsp. of chile powder

Method:
1. Preheat oven to 350 degrees.
2. Combine soups, broth, Ro-Tel tomatoes and chile powder; blend until smooth.
3. Place a layer of chicken in a greased casserole dish.
4. Add layers of tortillas, onion, bell peppers, cheese and sauce.
5. Repeat layers, ending with cheese.
6. Bake uncovered for half an hour or until brown and bubbling.
 
Had this King Ranch Chicken Casserole at a Texas friend's house a couple of nights ago. I liked it enough to ask for the recipe with the intent of tweaking it a bit.


Boil one whole chicken, save the chicken broth

When chicken cool debone and de-skin, set aside

Chop: One onion, One green pepper, mix together

Mix together: One can Campbell Cream of Mushroom and Cream of Chicken Soup,
One can Rotel tomatoes
One can chopped green chilies

Grate one large chunk of sharp cheddar cheese

When preparing the dish, soften each corn tortilla in the hot chicken broth. that is at a low boil.

Layer the 1) chopped chicken, 2) tortillas, 3) soup, tomatoes and chilli mix, 4) cheese.

Top each layer with chili powder.

Cover and cook 350oF for one hour.

Yep, I can vouch for that! I can also vouch for King Ranch Chicken. Being from Houston originally, we call it Spring Branch Chicken at our house:icon_smile_tongue:

Reverse Bratworst appetizer. Char them mildly over coals
In a pot add course chopped onion, beer, chicken stock and butter. Bring to just between a simmer and a slow roll boil. Add charred Brats. Serve with Yellow, brown, course, poppawn :)
Mustards. Maybe even some of those mini loafs of dark bread and some good sauerkraut.
(Good sauerkraut comes in glass jar or home made, bad sauerkraut comes in can)
 
the funny thing is . we came to New Braunfels Texas for an auto extrication comp. and won , we are just a bunch of Volunteer Fire Fightrers , we all love the food and will be coming back
