I've been asked a on here before about our Armadillo Potatoes that we cook for sides from time to time, and have posted the recipe on my blog.

I've done taters lots of times on the kettle. I just treat it like an oven with smoke, and run it about 325, with the taters on the cool side.


Same here, when people ask how do I grill something that's normally cooked in an oven. They always feel dumb when I say the exact same way. :wacko:
 
I have potato envy.
When I was young, the most common and often only variety was called "Delaware" a large knobby delicious potato.
Since them, supermarket managers want only varieties that they think housewives like, glossy uniform pale potatoes with way too much water content and no flavour.
This is my state, other states get loads of great varieties and it drives me nuts.

I would like to do those, if I ever find a potato that would make it worthwhile.
Looks like a delicious thing to do!
