Little Dick's oaky-schmoke babybacks (pr0n)
Greetings,
As I stated earlier, the WSM did the best job to date at holding temperature. With a little fiddling, I was able to stay between 260-275F. http://www.bbq-brethren.com/forum/sh...highlight=dick Today I was excited to schmoke a rack of babyback ribs. First, since they are a rack that I got from a new source and I was eager to try them. Second, I got some cast-off white oak bucket staves and would be using them for schmoke! ...kinda chubby babybacks, fatter at one end...$2.99/.lb... ...addition of the oh-so-yummy Simply Marvelous Sweet & Spicy ...after cruisin' the sweet oak schmoke for four hours ...gratuitous rib shots! They could have gone a wee bit longer on the WSM, but it was getting late and we were hungry. I must say, I am VERY happy with oak wood, very subtle schmoke flavor. Mrs. Little Dick likes the babybacks over my usual St. Louis cuts. Thanks for looking and I welcome comments/suggestions. Little Dick

Is this any better? In the first pictures I posted, the bark DOES look dark/burnt.
