Design Question - Smoke Exhaust
I'm designing an outdoor cooking space that will have multiple devices: an Argentine grill, a hooded grill, a brick smoker (and hearth) and a caja china cooker (also used as an open grill or with a spit). The weather is an issue so I need to build a gazebo to cover the area. Open sides, full roof. Has anyone dealt with the smoke exhaust issues in connection with gazebos? Am I better off with a shorter height and installing a vent hood or should I simply raise the height and let the smoke exhaust through the open sides? Or will a single chimney at the peak of the gazebo do the trick?
