i make sure that we have enough knives and cutting boards for all of the meats at both the raw and cooked stage. i also keep plenty of the mr. clean or lysol brand sanitary wipes handy to wipe down the tables. we start each contest with a new box of rubber gloves. i then keep one rubbermaid container to hold all of the dirty utensils and wash when we get home. i also keep a rubbermaid container separate with a bottle of dawn so in case we need to, we can heat some water on the grill and have hot water to wash dishes with onsite. all this costs just a smidge under $1500. :)

If some body can afford a $2000 portable sink can you imagine the cooker that they would have.

Then again, maybe they have a crap cooker because they spent all there cash on the sink.
