In agreement here, mine are not wobbly and the pvc doen'st take up much space. We carry 4 sets in my trailer, cost about $20 and took 5 minutes to make.

We used to do PVC as well with no wobble issues. In our new trailer, we don't have tables to lift, so we don't use them anymore, though I have them on a table in my garage I use when I'm cooking at home.

Do you have a couple extra team members that can stand at each end and hold it up? Very adjustable that way.
