Default UDS for smoking Summer sausage

Any one know if a hotplate will work at holding temps in a steel drum for drying/cooking/smoking summer sausage and snack sticks. I have an XL and Large Big Green egg I just can keep temps that low and I can't hang everything. Looking for a cheap way to do it I spent enough money on the eggs this year. I'm sick of cooking the sausage in the oven.

What temps do you want to cook at? I had a very successful snack stick cook in the UDS running at 150*F. Used a very small amount of lump to start the basket and let the temp creep up very slow to the temp desired. YMMV

I used my uds to smoke some venison summer sausage a couple months ago.
I filled the charcoal basket like normal, and then lit only 2 briquets and put it on top of the full basket.
I managed the airflow and kept the temps around 150 for a couple hours, then bumped it up to 170 for a while then up to 200 to finish it. It really wasn't that hard to do, for me.

Sounds like what I'm looking for 150-170 degree range for several hours then finish at 200. Gonna have to make one.
