Jerk chicken and Dirty Rice

Had this on the brain for a bit.....

I start out dirty rice with a fatty.

Here is it off the Weber....cooked with a chuck of cherry.

I cook some chicken liver in a little olive oil...

In goes the onion, bell pepper and celery.

Then the fatty that's been grated over a box grater.

Add in 4 cups of cooked white rice and some Tony Chachere's Creole Seasoning and you're good.

I grilled up some chicken thighs that had Walkerswood Jerk marinade on them. This was an early grill shot before they had much color.

Here it is plated with some asparagus. Sure was tasty.

Naked Fatty Dirty Rice!

Love some dirty rice! My sister lives on the edge of a Jamaican neighborhood in New Haven. They drum cook jerk chicken and goat right on the sidewalk for sale, while mama is doing the rice and cabbage inside. Cant go there without hitting them up.

I love naked fatties. And in dirty rice it was stupendous! I could have just eaten a bowl or two of that with a little hot sauce. So good....

If you use hot sauce on that dirty rice, with the jerk chicken, you gotta get some Grace's Hot Sauce. It, like the Walker Woods, is a product of Jamaica, and has wonderful flavor.

Half the time I think they are burning their farkin couch, but they add a layer of dried allspice berries in a tin. You can get Pimento (allspice tree) chips online. If you go to Negril, they only jerk with Pimento wood and leaves. Thats why its so hard to duplicate jerk anything stateside. I suppose I should now be ready for what can successfully be jerked in the US!
