I have smoked it, not great, I agree with Bludawg. Duck was pretty good though.

If I tried it I would probably brine in over night, then wrap it after it got a decent color to it. I also like the idea about the bacon, EVERYTHING'S better in bacon!!!!!

I was always told you shouldn't eat wild rabbit until after a couple hard freezes as the livers have a parasite. Don't know for positive if it's true or not.

Just stuff the rabbit into a huge fatty for smoking. Done and done! Cut end off the fatty and you have the rabbit coming out of the rabbit hole for dinner.

Down in we smoke them but then use them as ingredients in other dishes. Smoked rabbit gumbo for instance is really good.
