Default Rib Practice with PRON

Decided to get into competitions next year. Did a little practice today on ribs. Well.... everything but actually boxing them.

Took some pics along the way, thought I would share.

Tried a new brine/soak





Rubbed and ready for the smoker

Cut up all my logs while waiting



Not bad for a soon to be rookie....

Looks great! FYI, might want to get the bark off your wood. It can cause a more acrid smoke & bitter flavor. Good luck on the circuit
