and Andouille Sausage Gumbo.
Smoking the duck was easy, making the gumbo was a labor of love. :-D

I rubbed the duck (domestic duck) with butter, seasoned with S&P...

into the BPS UDS at 325F....
Saved the drippings and duck fat for the gumbo.

roux.. 3/4 cup duck drippings and 3/4 cup flour...

I've made this before but this batch tasted extra special. I think it was the drum. :-D

I've got some Andoullie suasage in the freezer I brought back from LA. Looks like I need to get some duck for the weekend and attempt, I said attempt to do something close to your tasty looking preparation. - nice job
 
Jeanie, as always you've posted a wonderful cook. I thought the spares I entered for the TD tonight were good, but this just makes them seem so.....ordinary! Excellent cook; thanks for sharing!
