Finally done and pulled. I think that I am going to leave them undressed and let people put sauce on as they wish. I think that I left them in just a tad bit too long. I think the bark was just a tad bit overcooked, but once inside it was oh so juicy. Tasted great as well. I think that my problem can be traced back to a faulty probe on my thermometer. Thanks everyone for the advice of the last couple of days. I am learning a lot.
