Please use the picture with the hens in the foreground as my official entry.
Chile rubbed cornish hens. Spatchcocked and cooked off on the Summit Charcoal with Weber briquettes and a little pecan smoke.
Black Bean/Corn salad with a jalapeno lime crema to go with it. No cook thread this go round.

Please accept this as my official entry for the “Yardbird Cookoff” Throwdown.

Texas-style half chicken. Brined in Oakridge Game Changer for 5 hours, rinsed, patted dry, then a medium coat of Killer Hogs Hot. Cooked on a wire rack in the WSM with a Hunsaker vortex plate and no pan. Glazed at the end with a combo of Swamp Boys BBQ Sauce and Oakland Dust Hog Sauce.

Default Jerk Chicken

My Entry into the Yardbird Cookoff is Jerk Chicken. Marinaded for 12 hours had great flavor throughout. Just enough spice from the habanero. Served with traditional Rice and Peas. The Platter is my entry.
