pumpkin presentation

In BBQ Grail's 4 ingredient challenge, pumpkin was involved this month. I am not a huge fan of pumpkin, so I used it for presentation more than consumption... I thought it was a fun way to use it. The chicken and apples in the dish were grilled, added to brown rice and a bit of Hot Squeeze chipotle sauce.

At a local competition a couple of years ago a team turned in their beans in a similar presentation. I'm told that the look on the judges face was priceless. The entry did not score well. :-D
