what would be the advantage or disadvantage of cooking a whole shoulder for comps versus a couple of butts.would it give alot bigger money muscle to use?more bark?

Some think/believe that the meat in the picnic is slightly sweeter (really, I've read it) than is in the butt. I'm not certain, but it does give you different pieces than you would get with butts only. This said, two butts of the same weight as one whole shoulder will render more meat. Two butts will give you a little more bark to work with. I like cooking shoulders, but in a competition if whole shoulders aren't required (are in MBN, not in KCBS, GBA, etc.) I cook butts. Two butts also gives you two MM's to play with...
