Default pork jerky????

i had plans to make some deer jerky tomorrow. i took a deer ham out of the freezer last night, (drinking mod) well when i opened it up today, it was a wild hog ham!!!! anyone ever heard of pork jerky????

No experience with pork jerky, but what the heck...give it a try. My experience with South Texas feral piggies is that they are LEAN. I see you are from Georgia...they might run a little fatter in your neck of the woods. I'd break down the muscle groups and remove all of the excess fat you can find. Might want to find out what is your comfort level with pork temps...I'm guessing wild is riskier???

Man, I've eaten all kinds of jerky (not pork, tho) and I can't think of a single reason you can't make it!

I have made it and it ain't bad at all. As a matter of fact, I have made it a bunch out of pork loins.
