Default First butcher paper brisket point /w S&M peppered cow (pron)

Wrapped at 160 and it turned out perfect! Peppered cow is amazing!

So let's see if I got this right. You take BP, just like the stuff from the butcher, shiny on one side only and wrap the meat to finish the cook? Or am I missing something and this is a special BP with no shiny side? Oh and that is hittable many times...........

Oh no, you cooked it too long, brisket should stand proud when held up like that. Not just flop over. Keep trying until you ruin it properly

Shiny side means WAXED, which is bad for BBQ.
If you try this, make sure it is UNWAXED paper. Sam's and RD both sell it. RD has many different sizes.
