WSCG Wings - The Wimpy, The Hot, and the OMG! (PRON)
It's Sunday Funday, and I wanted to try wings on the WSCG. I got a bunch of wings from HEB on Saturday and split them up in three bowls. The first, about half of the wings, were just done with EVOO and Season Salt and Pepper. Got a lot of wimps at the bar...
Next was bunch with HDD... Finally, a dozen or so of Crucible. This stuff got my sinuses running just from smelling it while I mixed them up. All bagged up and into the fridge over night. Sunday, pulled out the bags, separated them on different trays, and hit with HDD and Crucible again. Onto the WSCG, baskets in the back, Wimpy on top, HDD on the lower left and Crucible on the lower right. Over shot my target again. Good thing this thing is forgiving... Back closer to what I was looking for. After an hour at around 250*, wing temps were close to done. Let's see how fast the temp can go up. Open the intake wide and flipped up the exhaust. It went from 250* to over 400* in less than 10 minutes. Chef's Prerogative... The Wimpy (but very tasty), The Hot (with a sweet and savory first taste), and the OMG (no fancy comment about these. They are just HOT!)! They were all really good. Had to place an order for another bag of Crucible. Starting to run low... Oh, I also picked up a couple of the Weber Grill Lights. They work pretty good! Thanks for looking...

Did some HDD on some boneless skinless breasts last week and went a little heavy handed. Not marinated over night like you but heavy on the shaker right before they smoked.
Wife couldn't eat them. I ate a few carefully, then put them in the fridge over night. Toned the heat down after 24 hours. Can't imagine the crucible. |

Mmmm they all look good. Now I can do some heat BUT I want them to have some flavor too! lol Never could eat heat just for the sake of being hot.

Your wings look absolutely fantastic Terry.
I do wings pretty much like you did. Marinate overnight with a mixture of olive oil and HDD. Then hit them with another layer of HDD when they go on the grill. These are plenty hot and still have great flavor. I'm like stlsportster. I can't imagine how much hotter Crucible would be. Especially giving them a double dose. Every time you post a cook on the WSCG I get a little more jealous. I truly love my kettles and use them more than all my other cookers combined but I want one of the Summits in a huge way.

They were done and I didn't want to wait for it to get hotter. They definitely had rendered the fat, were not flabby, and had crisp edges. A little longer and it would have all crisped up. Next time I think I will go turbo a little earlier to get a little more crispness.
