I would be careful that region is known for its very aggressive SNIPE. Snipe Hunting is a heck of a good time. Make sure you use a paper bag the plastic ones can be clawed through. Thank you for sharing Jason, that is great experience that will be with them for decades.

So far so good. They did a little opening of the wsm door to keep that initial temp at 300. Getting good color.

Want those big meats done and holding which makes turn ins easier.

Big meats are a little behind. I'd like them to be done and holding by 11, but most likely it will be 12ish. Luckily finishing late still gives pork an hour to rest and brisket 2hrs.
