Good chicken wing recipe?
I plan on making some wings this weekend while I watch some football and drink beer and was looking for a great recipe. I did the one off the Dizzy Pig website and they turned out great, really good infact. I wanted to try something else though, what do you guys recommend?

Smoked Chicken Wings (also works good on Turkey Wings!)
Cut wings into separate pieces throwing away the tip. Rub evenly with your favorite rub recipe for chicken. Marinate in the refrigerator in a zip lock bag for 24 hours, make sure they are sealed or everything in your frig will smell and taste like garlic! Smoke on you smoker using the in-direct method, If you cook using the direct method you have to watch them all the time to keep from burning because the skin has a lot of grease, I have a Weber so I build a fire as: (This make a constant fire of 250 to 275 degrees, low and slow for smoking) 10 - 15 briquettes on each side of the grill, after they are ready (white ash), hand full of hickory chips, that have been soaked in water for at least 30 minutes, on each set of coals (they will smoke about 30 - 40 minutes) 3 - 4 briquettes added to each side along with more hickory chips every 30 to 40 minutes, (I usually wait until the smoke from above pretty much stops, it will depend on weather, wind, etc. may be 30 minutes) 2 to 2 1/2 hours or until they are not "greasy" anymore........Only open the grill to add coals or hickory! Remove from grill and baste in your favorite Wing sauce, I use Franks Buffalo Wing Sauce!

One of my favorites is stuffed chicken wings, You de-bone the wing, and stuff it with a mixture of chicken meat rice and veggies, Some recipes use chopped shrimp or pork. The only problem is that boning wings is VERY tedious. They are usually fried, but I have smoked them with good results. Recipes can usually be found under Thai cooking. It's surprising how much you can stuff into a wing; you don't need to make very many of them.

We fry using tempura batter...then coat with a spicy BBQ Sauce
Mix 1/3 cup margarine melted to a viscious liquid 1 tablespoon habanero sauce 1/2 tablespoon garlic salt 1/4 teaspoon cayanne 1/2 tablespoon chopped whole smoked peppers Let it sit for an hour to rehydrate the peppers and let the spice balance mix with 8oz of your favorite bbq sauce...I use mine, but I'd say a good hickory sauce will be perfect. Wings - Heat oil to 375 Coat wings in tempura 20 or so are done in 11-13 minutes on our fryer...they should be a golden brown color... toss in sauce and enjoy.. The Tempura batter stays crunchy even after 15 or so minutes sitting in sauce...great trick
