Leave in the pit?
Leave in the meat? Leave in both the pit and the meat? How much do you want to spend? What sort of pit are you using?

You mean a thermometer to leave in your pit while smoking?
Some use digital thermometers with probes - dangle it inside and make sure it doesnt touch metal. Poke probe thru a potato and rest on the grate. I've got the probes, a door mounted Spicewine smoking thermometer and one of these: You can never have enough and calibrate them often
