You mean a thermometer to leave in your pit while smoking?

Some use digital thermometers with probes - dangle it inside and make sure it doesnt touch metal. Poke probe thru a potato and rest on the grate.

I've got the probes, a door mounted Spicewine smoking thermometer and one of these:



You can never have enough and calibrate them often
