Those labor fees do not include on site cooking, they are for all the work involved in catering onsite that would not take place with a drop off. I don't cook on site ever. I will (for a fee) show up early with the smoker on site to give the appearance that we are cooking on site when we are actually finishing the cooking process on site. I charge $150 for smoker onsite. I explain to the client that barbecue cooks for 8-14 hours and they probably don't want to hear me banging around at 4am. Most understand and if they want us to show up a little early with the smoker it gives them what they are looking for.
