Default I spy with my little eye....

...a Snake River Farms Tritip 2pk looking at me. Saw this at my local Argentinian market and HAD to get it. Wagyu tritip goodness...



Dry brined and rubbed with a Santa Maria style rub...


I direct until 105 then blast on the cast iron...


Grilled potato wedges seasoned with SPOGOS...


Added a few chicken apple sausages from butcher box...


Pulled at 125 beautiful medium rare. Had some leftover au jus sauce from yesterday’s brisket...



Was phenomenal! Tender as all and loved the flavor. First Wagyu tritip and didn’t disappoint...

Yeah I was shocked when I saw it. Guy working the counter told me they occasionally get some specialty products. Couldn’t pass it up.

We have multiple local Mexican markets but not an Argentinian market, that sounds great!
