I'll be there I'm cooking Maple Chipotle braised beef shanks. This is the same recipe we used to win Cooks Choice at the jack this year but at the Jack we used short ribs (beef shanks were cheaper ). Doug is making the creamy grits to go with them.

I'll be there with fresh hand made sausage, smoked cheese, and carmelized onion tarts.

I don't suppose you'd be willing to share that recipe? I made some beef ribs last weekend. While they were real good, I just didn't seem to have the extended flavors into the meat... And don't worry, I would never turn in something like that. I turned in combo's at the Jack and finished in the 40's... But I had a good lunch for myself and my crew from the leftovers at the Jack!!!

Good thing I still have some UFO's leftover then... I don't suppose you've tried it with the UFO Rasberry?
