As I mentioned yesterday, CINCHOUSE had me whip up a batch of "Rocket Around the Christmas Tree Sauce" from a recipe I last used in 2012 to feed the people of Wicken, East Cambridgeshire, UK.

I used all 4 Scotch Bonnets I had on-hand... and we wished for more. Must be a weak harvest this time around. Flavor was excellent, but I like to sweat a little.

You have some awesome looking wings going there. It's impressive, the amount of time and work you put into making all of your sauces and marinades pretty much from scratch. No doubt the extra effort shines through on the finished product.
 
You ah such ah Jerk Mon... But how SPICY of a Jerk are you? Care to share the recipe?

I'll ask the Boss... More to follow. She's protective of this one... I don't even know it.

Maybe I can get a link or a kick towards the basis for the recipe. We'll see.

Brother, as if you couldn't tell... it's one of my favorites.

I'm sure Marty's Nellie has the best recipe out there... but Grace or Walkerswood is a good place to start if you're muckin' about.

Get some extra limes and hit the bird with 'em just before you eat.

I need to join Marty's Jerk Rib party.... that's got to be ridiculous, especially with some Hot Grace Jerk! Oh, Lawd....

:thumb: How does it compare to WalkersWood? That's been my go to for years. I'm pretty sure this is probably much better.

Great question. She started making this in.... Oh... '02 when we lived in Germany. It's a sauce. It's not a marinade. Without the recipe, I can tell you it's mainly spices, some oil, and some chile... run through the food processor/blender. I toss our cooked wings in it, and it's awesome. LOTS of flavor that's meant to go to your mouth very soon.

I'm also a huge fan of Walkerswood and Grace, but those two are marinades... and there's a metric F-Ton more salt, heat(spice), and vinegar in the marinade than the sauce.... for good reason. You're going to cook it before you eat it... and it'll be delicious.

Both could really do with a good squeeze of lime.

Hope that'll help, man. I like all of the above options, but for different things / situations. Keep asking questions.

I think this is it... grabbed a quick snapshot.

Ignore the directions on the chicken wings and whatnot. She just makes the sauce. I like to apply a mild dry rub to the bird before we grill the wings... then toss 'em in the sauce to coat.
